Triglycerides – Chemistry

1) Oxidation of Triglycerides – RANCIDITY
When fats are exposed to air for too long their unsaturated fatty acid undergoes oxidation and forms short chain aldehydes and acids. They give unpleasant smell. Rancidity can be prevented by ANTI OXIDANTS.
Vitamin E, Gallic acid, Butylated hydroxy anisole and Butylated Hydroxy Toluene are used as preservatives.

2) Partial reduction of Fats
To increase shell life the unsaturated fatty acids are converted to saturated fatty acids. But this results in the formaton of Trans fat. Trans fats increases LDL and Reduces HDL, which may cause cardiovascular diseases.
3) Saponification
When Triglycerides are treated with alkalis they form free fatty acids and glycerol. The formed free fatty acids act as soaps. This method is employed industrially to manufacture soaps.
